Hungarian One-pot / Family Pork Porkolt Recipe

There is much more to Hungarian cooking than the stereotypical goulash, porkolt for one.  Porkolt is an easy, one-pot, family dish and can be made with cubes of pork shoulder or veal.  Just fry off the onion, add in the pork to seal the meat, add in the other ingredients, stir and leave to cook for a few hours on a low heat.  Just serve with gnocchi or polenta.  Super easy, super delicious!

Ingredients (serves 4)

500g pork shoulder

1 white onion, chopped

1 large tomato, chopped

(if the quality/taste of the tomato is not great, use several smaller ones with better flavour)

3 red peppers, sliced

1 green pepper, sliced

5 tsp hot paprika

Water if necessary

3 tbsp rapeseed oil

1 tsp of cornflour in 1 tbsp cold water (if necessary)


Fry chopped onion in rapeseed oil until soft

Put meat into pan and seal

Add tomato and peppers (save a few strips of pepper for garnish)

Stir and cook for a few minutes

Add paprika and stir

Top up with a little bit of water if needed

Cook on slow heat in the oven (about 150 degrees Celsius) for 2 to 3 hours

(This could also be done in the slow cooker, heat all the ingredients as above then add to slow cooker and heat on high for 5 to 6 hours)

Garnish and serve with polenta or gnocchi and a side salad
